Officially bored of spinach

Okay, I need a break from spinach. It was my go-to veggie and now I definitely need a hiatus. Does anyone have any suggestions for an easy veggie fix? I don't like to spend a lot of time in the kitchen, but I want something that's going to give me lots of nutrients like I've come to rely on.

  1. I just made some roasted veggies with onion vinaigrette - check it out on my blog! It's super quick, the whole process took maybe 15 minutes. Let me know what you think - and I welcome any chicken suggestions, I'm tired of eating the same ole' bird!

  2. I am not sure of the break down of nutrients between Spinach and other veggies but I do know that at our house quickest and easiest wins out. We usually purchase the steam bags in the frozen food section [no sauce added mind you] and cook them up in 6 mins or less. Sprinkle w/ a small pinch of sea salt and they're good to go.

    We also eat Sweet Potatoes fairly often and have started roasting vegetables [mostly squash] in the oven on baking sheets while cooking chicken. I'm just happy spring has sprung here in the South I'm ready for farmers markets.

    I'd love to hear your favorite Spinach recipes.

  3. Love sugar snap peas! Mix up with some carrots and you got a great snack! I also have been loving sweet potatos, sliced up thin and baked, maybe a little melted cheese on top...low fat of course. :)

  4. answer: broccoli slaw.

    i wrapped it in parchment paper with salmon, peppers, soy sauce and coconut oil and baked it and it was unbelievable.

    I also fry it up with 99% fat free ground turkey plus spices and make lettuce wraps.

  5. I am so with you on convenience! One of my on-the-go veggie choices is my pepper and onion chop. After teaching a class or really anytime I am away from home, It's easy to pack my protein shake along with chopped up bell peppers (I usually pick The Stoplight Peppers) in green red and yellow. I dice up some red onion and throw it in a ziplock. I love red onions cause they give everything a kick. Sometimes I add a tablespoon of olive oil and balsamic for more flavor. All 3 peppers with the onions make about 2-3 servings. Be sure to pack minty gum, too!

  6. I loove spinach! If you're tired of the taste, try steaming it, cooling it, and putting it in a shake with milk, berries and a banana (blend it up!) You actually can't taste it at all but you still get all the nutrients :)

    I can't wait until it gets warmer outside to whip out the BBQ. It's so easy to eat veggies that way: Just skewer them on with some chicken or fish, cover lightly in olive oil, add your favorite herb and grill them up. Is it June yet?

  7. Try kale, Stacy! It has a nuttier flavor and best of all it's the #1 vegetable on the ORAC scale - a measure of a food's ability to raise your body's disease-fighting antioxidant levels. (Spinach takes second spot on the list).

  10. My go to is bbq vegetables, spritz with olive oil and a dash of herbamare seasoning. It's organic and uses sea salt. Best ever! Try zuchinni, carrots or what ever vegetable you like. Patty pans are the best!
